Here’s a lovely warm drink full of festive spirit for the holiday season. It’s definitely a drink that I see Gabrielle, the heroine of Let’s Misbehave, whipping together on Christmas day.
1 litre apple juice
1 cinnamon stick
1 star anise
2 cardamom pods
half an orange, studded with cloves
100ml Morgan’s spiced Caribbean rum
Mix all the ingredients in a saucepan. Gently heat the mix to just below boiling point, then leave to cool and infuse for 10 minutes. Pour the apple rum through a fine sieve into serving glasses. Add a layer of whipped cream onto each drink, then dust with ground cinnamon and garnish each glass with a cinnamon stick. Serve immediately.
